Ingredients
1 pkg (340 g) | Italpasta Gluten Free Penne |
1/2 cup (125 mL) | barbecue sauce |
3 tbsp (45 mL) | Italpasta Extra Virgin Olive Oil |
2 tbsp (30 mL) | apple cider vinegar |
1 tbsp (15 mL) | maple syrup |
2 tsp (10 mL) | Dijon mustard |
4 cups (1 L) | baby spinach |
8 oz (250 g) | Canadian bacon, cooked and sliced |
1 | red pepper, chopped |
Steps
- In pot of boiling salted water, cook pasta according to package directions; drain.
- Meanwhile, whisk together barbecue sauce, olive oil, vinegar, maple syrup and Dijon mustard.
- Toss pasta with barbecue sauce mixture, spinach, bacon and red pepper.
Tip: Add cream and/or Parmesan cheese for a richer sauce.
