|2 tbsp (30 mL)||Italpasta Extra Virgin Olive oil|
|3||boneless, skinless chicken breast cubed|
|½ tsp (2 mL)||each salt and pepper|
|1||onion thinly sliced|
|½||red pepper thinly sliced|
|½||green pepper thinly sliced|
|1 tbsp (15 mL)||Cajun seasoning|
|2 tbsp (30 mL)||all-purpose flour|
|1 can (398 mL)||Italpasta Diced Tomatoes|
|1 cup (250 mL)||sodium-reduced chicken broth|
|½ cup (125 mL)||chopped green onion|
- Heat the oil in large non-stick skillet set over medium-high heat. Add the chicken, salt and pepper. Cook for 7 minutes or until lightly browned. Add the onion, red pepper, green pepper and Cajun seasoning. Cook for 5 minutes or until tender-crisp. Sprinkle the flour over the skillet; stir until combined. Add the diced tomatoes and chicken broth. Simmer for 5 minutes or until thickened. Season with salt and pepper to taste.
- Meanwhile, cook Italpasta Wholesome Grains Spaghetti in a large pot of boiling salted water until al dente, 7 minutes. Drain well. Toss with chicken mixture and garnish with green onion.
Tip: Add shrimp to the sauce during the last 5 minutes of cooking for added Cajun flare.
