Ingredients
1 pkg (200 g) | Italpasta Prepared Dinner Macaroni and Cheese, Extra Creamy |
2 cups (500 g) | chopped baby kale |
2 tbsp (30 mL) | finely grated lemon zest, divided |
1/3 cup (75 mL) | Italpasta Italian-Style Bread Crumbs, toasted |
1/3 cup (75 mL) | grated Parmesan cheese |
2 tbsp (30 mL) | chopped fresh parsley |
1/2 tsp (2 mL) | pepper |
1/4 tsp (1 mL) | salt |
Steps
- Prepare macaroni and cheese according to package directions. Stir in kale and 1 tbsp (15 mL) lemon zest; cook over low heat for about 2 minutes or until kale is wilted.
- Stir together bread crumbs, remaining lemon zest, cheese, parsley, pepper and salt.
- Divide macaroni and cheese among bowls and sprinkle with bread crumb mixture.
Tip: Substitute baby spinach for the kale if desired.
