|2 tbsp (30 mL)||Italpasta Extra Virgin Olive oil|
|1||green pepper thinly sliced|
|½||small red onion thinly sliced|
|½ tsp (2 mL)||each salt and pepper|
|½ cup (125 mL)||plain fat-free Greek yogurt|
|2 tbsp (30 mL)||lemon juice|
|2 tsp (10 mL)||finely grated lemon zest|
|1 tsp (5 mL)||dried oregano|
|1 tsp (5 mL)||honey|
|2 cups (500 mL)||halved grape tomatoes|
|½ cup (125 mL)||chopped kalamata olives|
|⅓ cup (75 mL)||crumbled light feta cheese|
- Cook Italpasta Wholesome Grains Bowties in a large pot of boiling salted water until al dente, 8 minutes. Place under cold running water; drain well.
- Meanwhile, heat the oil in a large nonstick skillet set over medium heat. Add green pepper, onion, salt and pepper. Cook for 5 minutes or until tender-crisp. Cool completely.
- Stir the yogurt with the lemon juice, lemon zest, oregano and honey. Toss with cooked bowties, vegetable mixture, tomatoes and olives until well combined. Season with salt and pepper to taste. Sprinkle with feta before serving.
Tip: Serve with grilled chicken or seafood for a light dinner or over baby spinach for lunch.
