Ingredients
1 pkg (340 g) | Italpasta Wholesome Grains Fusilli, cooked and drained |
2 tbsp (30 mL) | Italpasta Extra Virgin Olive Oil |
1 | carrot peeled and shredded |
1 | red pepper thinly sliced |
1 | stalk celery thinly sliced |
¼ cup (60 mL) | finely chopped green onion |
3 cups (750 mL) | shredded rotisserie chicken |
1 cup (250 mL) | broccoli florets |
1 cup (250 mL) | snap peas, thinly sliced |
½ cup (125 mL) | plain, fat-free Greek yogurt |
1 tbsp (15 mL) | finely chopped fresh dill |
2 tbsp (30 mL) | finely chopped fresh thyme |
1 tbsp (15 mL) | lemon zest |
2 tsp (30 mL) | lemon juice |
½ tsp (2 mL) | each salt and pepper |
Steps
- Toss the fusilli with the carrot, red pepper, celery, green onion, chicken, broccoli and snap peas in a large bowl.
- In a small bowl, whisk the Greek yogurt with the dill, oil, thyme, lemon juice, lemon zest, salt and pepper. Add to the pasta mixture and toss well to coat. Adjust salt and pepper to taste.
